The Ultimate Leftover Chicken Sandwich ft. Rubies in the Rubble

If you haven’t heard of Rubies in the Rubble you will after reading this post. Founded because of the growing problem with food waste, this is one brand on a creative mission to combat food waste. So much fruit and veg ends up in landfill every day, just because it doesn’t ‘look right’. Crazy, I know!

With their range of sauces and relishes, you will notice the strapline ‘condiments with a conscience’. All the products are made sustainably, from surplus ingredients that would otherwise go to waste. What a creative and clever way to help the environment.

So, I’m quite impressed with myself that I will be doing my bit for waste and sustainability. Whenever we have a roast dinner there’s always lots of meat leftover and whilst I will use some in a curry, there’s always some spare.

So, I’m sharing with you my favourite way of using up the leftovers from my Roast Chicken (inspired by my Dad) featuring the Aquafaba Mayo which you can now get in Sainsbury’s – let’s have a woop woop!

The Ultimate Leftover Chicken Sandwich

Ingredients

  • Loaf of fresh bread (I went for thick sliced white bloomer)
  • Butter/spread
  • Rubies in the Rubble Aquafaba Mayo (gf) (vg)
  • Leftover free-range roast chicken
  • Leftover stuffing
  • Freshly ground black pepper
  • Salt
  • Fresh lettuce leaves (optional) (but if you have them lying around why not use them up!)

Method

  1. Butter both sides of bread
  2. Spread some Rubies in the Rubble Aquafaba Mayo on one side
  3. Shred and slice the leftover chicken and place this on top of the mayo slice of bread, along with some of the stuffing
  4. Season with salt and pepper
  5. Put an extra dollop of mayo on top for good measure

Voila! Everyone at work was super jealous of my sandwich and obviously I boasted about the vegan mayo I had in it too (seeing as some of them are vegan!)


Something that I didn’t know before, but I do now, is that this mayo is made with aquafaba as a substitute for egg. Hence why it’s vegan. But to be honest, I was a bit like what is aquafaba? *inserts confused face*. Well, it’s the protein-rich water left over from cooking chickpeas which would normally be thrown away – and yes I do normally throw this away!!

Discovering the fabulous Rubies in the Rubble brand has definitely inspired me to be more conscious about food waste and quite frankly the mayo was the best I’d had. It had a lovely smooth texture and a delicious flavour to it. It didn’t last long in our house, put it that way!
